A great way to start the morning—mini pancakes layered with juicy red strawberries, fresh blueberries and yogurt in fresh-tasting parfaits.

INGREDIENTS

  • 22 Kellogg's® Eggo® Minis Buttermilk pancakes
  • 1 cup plain low-fat yogurt or vanilla low-fat yogurt
  • 1/2 cup finely chopped strawberries
  • 1/2 cup blueberries
  • Fresh mint leaves (optional)

DIRECTIONS

1. Prepare KELLOGG’S EGGO Minis Buttermilk pancakes according to package directions. Cut one of the pancakes in half. Tear remaining pancakes into bite-size pieces.

2. In two 12-ounce parfait glasses alternately layer yogurt, pancake pieces, strawberries and blueberries. Top each parfait with one pancake half. Garnish with mint (if desired).
